Peanut butter and Chocolate Protein Muffins

Im making protein muffins for my flatmate something I havnt exactly tried earlier. So I looked up a couple of recipes, some were just dry and yuck and some were just hard core protein. One of the youtube video that i checked out was from themuscleman and I liked the way he demonstrated his Apple cinnamon protein muffin recipe more than the recipe itself. However, I made up my own recipe and I must tell you it tastes delicious and doesnt have any sugar, not even stevia.

Ingredients: (makes 24)

1 cup oats

1/2 cup wholemeal flour

6 scoops of protein powder (I used chocolate)

4 large eggs (use 6 eggs if you want to remove the yolks)

1 banana (optional)

2 tbsp of peanut butter

1 tsp baking soda

2 tbsp honey

1 tsp vanilla essence

1 1/2 cup water

canola oil spray (to grease the muffin tray)

walnuts (optional)

 

Method:

Pre heat oven at 180 degree Celsius.

Mix all the dry ingredients, that is, oats, wholemeal flour, baking soda and protein powder together in a bowl.

In a blender, add the eggs, peanut butter, banana, vanilla essence and water.

Mix the wet ingredients along with the dry ones. Check if it is sweet enough and if not add the honey. If it is already sweet (because of the banana) then skip the honey.

grease the muffin tray by spraying the canola oil.

Fill half of the muffin cups in the tray as they will rise.

Place the tray in the oven and drop the temperature to 150 degree Celsius and let it cook for 15 minute. Use a skewer or knife to poke the muffins to check it it comes out clean. If it doesn’t then cook for another 2-3 minute else take them out and let them cook in the tray.

Store in an airtight container in the fridge and these will last you about 2 weeks.

Note: I use water instead of milk because milk makes the muffins very heavy.

Tip: You could use vanilla protein powder as well instead of chocolate. and have fun with it. use some blueberries or just 2 banana instead of 1.

      Thanks a lot for the words of encouragement. I will continue writing but I’ve just been swamped with a lot. And I know that shouldn’t be an excuse. I will continue writing in August. Sorry about the wait though. I hope you stick around till then. I would mean a lot.
